The spinach that never bolts. Spinach Perpetual (Leaf Beet) produces large, glossy, dark green leaves with a mild, earthy flavour from a single sowing that provides a continuous harvest for twelve months or more — unlike true spinach, which bolts at the first sign of heat or drought. The most reliable leafy green in the kitchen garden.
- Beta vulgaris var. cicla — Hardy Biennial (open-pollinated)
- Sow: March–August direct; harvest: year-round from a single sowing
- Full sun to partial shade; rich, moist, well-drained soil
- Sow 2cm deep, 30cm apart; harvest outer leaves regularly
- Does not bolt — reliable through heat, drought, and cold
- Harvest young leaves for salads; mature leaves for cooking
