Common Sage produces a hardy evergreen shrub with thick, pebbly silver-grey leaves and mauve-blue flowers — a plant that is as beautiful as it is useful, providing year-round structure in the herb garden and a powerful, earthy, slightly camphor flavour that is essential in stuffings, butter sauces, and pork dishes.
