Parsnip Tender & True

The finest parsnip in the range — and an RHS Award of Garden Merit variety. Parsnip Tender & True is a Victorian exhibition variety producing long, smooth, canker-resistant roots up to 35cm with a deeply sweet, nutty flavour that intensifies dramatically after the first hard frosts — the parsnip that makes roast parsnips the finest thing on the Christmas table.

• Pastinaca sativa 'Tender & True' — RHS AGM, Hardy Biennial (Victorian heritage)
• Sow: February–May direct; harvest: October–March
• Full sun; deep, stone-free, well-drained soil — do not manure
• Sow 1cm deep, thin to 15cm; slow to germinate — be patient
• Flavour intensifies after hard frosts — best from November onwards
• Canker-resistant — reliable in wet British winters
