Beetroot Chioggia is a Victorian Italian heirloom that reveals candy-pink and white concentric rings when sliced — a pattern of extraordinary decorative quality that makes it outstanding for salads, carpaccio, and any dish where presentation matters. Milder and sweeter than red varieties, and outstanding eaten raw.
- Beta vulgaris 'Chioggia' — Hardy Annual (Italian heirloom)
- Sow: March–July direct; harvest: July–October
- Full sun to partial shade; deep, well-drained, stone-free soil
- Sow 2cm deep, 10cm apart; thin to 10cm
- Outstanding raw — mild, sweet, no earthiness
- Serve raw, thinly sliced, to preserve the candy-ring pattern
